This meal works great as is, or double the ingredients to freeze the rest for a meal down the road!
Ingredients
- 1 medium onion
- 3 teaspoons minced garlic
- 1 medium green pepper
- 1/2 lbs kielbasa, cut into bite size pieces
- 20 oz (about 1 1/2 cans) diced tomato
- 4 oz diced green chilies
- 1 cup chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Cajun seasoning
- 1 1/2 cup uncooked instant rice
Directions
- Cook kielbasa in a large skillet and set aside
- In the same skillet (do not wipe down), heat onions, garlic, and green peppers over medium heat, covered, for 5 minutes or until vegetables are tender)
- Stir in kielbasa, tomatoes, green chilies, broth, seasonings, and rice
- Heat on high until boiling
- Reduce heat to low, cook for 10 minute or until rice is tender
