Cajun Kielbasa And Rice

  
This meal works great as is, or double the ingredients to freeze the rest for a meal down the road!

Ingredients 

  • 1 medium onion
  • 3 teaspoons minced garlic
  • 1 medium green pepper
  • 1/2 lbs kielbasa, cut into bite size pieces
  • 20 oz (about 1 1/2 cans) diced tomato
  • 4 oz diced green chilies
  • 1 cup chicken broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Cajun seasoning
  • 1 1/2 cup uncooked instant rice

Directions

  1. Cook kielbasa in a large skillet and set aside
  2. In the same skillet (do not wipe down), heat onions, garlic, and green peppers over medium heat, covered, for 5 minutes or until vegetables are tender)
  3. Stir in kielbasa, tomatoes, green chilies, broth, seasonings, and rice
  4. Heat on high until boiling
  5. Reduce heat to low, cook for 10 minute or until rice is tender
