Easy Skillet Lasagna


This meal is pretty simple to put together, and still a crowd pleaser. But before I get started, I’ll have to make something clear… I don’t do a lot of measuring when it comes to things like, cheese. To me, cheese is not simply a garnish. It can be a whole side dish. So my measurements given on things like cheese are an estimate, and same goes for garlic or any other seasoning. Feel free to use more or less depending on your own tastes. Freezer meal directions will be listed at the end.

Ingredients:

  • 2 tablespoons of olive oil
  • 1 lbs Italian sausage (or ground beef/turkey)
  • 1/2 medium onion
  • 2 teaspoons of minced garlic
  • 14 oz can of crushed tomatoes
  • 14 oz can of diced tomatoes
  • 8 oz can of tomato sauce
  • 1 1/2 cups of chicken broth
  • 25 oz bag of frozen cheese ravioli
  • 1 cup of mozzarella cheese
  • 1 cup of grated parmesan cheese

Directions

  1. Add olive oil to a large skillet
  2. Sautee onions and garlic on medium heat until onions are cooked and translucent
  3. Add sausage (or beef/turkey) and brown, breaking it up as you go
  4. Once sausage is cooked, add in all of your tomato items, chicken broth, and ravioli
  5. Turn heat up to high and bring to a boil
  6. Reduce heat and simmer over medium
  7. Let simmer until ravioli is cooked and sauce has reduced, stirring occasionally (around 20-25 min)
  8. Remove from heat and stir in mozzarella and parmesan cheese


Freezer Meal Directions

If you plan on making this into a freezer meal, just double your ingredients to split into two bags.

Directions

  1. Add olive oil to a large skillet
  2. Sautee onions and garlic on medium heat until onions are cooked and translucent
  3. Add sausage (or beef/turkey) and brown, breaking it up as you go
  4. Once sausage is cooked through, take it off heat to let it cool
  5. Split all of your tomato items, chicken broth, and ravioli, and sausage into two gallon size freezer bags
  6. Push air out of bag, lay flat, and freeze

Cooking Directions

  1. Thaw bag
  2. Empty into large skillet and bring to a boil on high
  3. Reduce heat and simmer over medium
  4. Let simmer until ravioli is cooked and sauce has reduced, stirring occasionally (around 20-25 min)
  5. Remove from heat and stir in mozzarella and parmesan cheese
